I have to admit I’ve overlooked swordfish in the past. I love swordfish but for some reason I don’t make it very often. Well, that’s about to change because this pan roasted swordfish with lemon dill butter makes me feel like I’m eating at the best steakhouse in town!
My pan roasted swordfish with lemon dill butter is light, juicy and flavorful. It’s simple to make, yet the infused butter with lemon zest and garlic makes it so delicious. It’s perfect for summer nights, which is why I’m also going to share how to cook this recipe on the grill. Let’s get right to it!
How to make Pan Roasted Swordfish with Lemon Dill Butter
Start by preheating the oven to 400 degrees. Make a quick-infused butter by combining the butter, minced garlic, lemon zest, dill and a pinch of salt in a small bowl. I use a fork to whip it up.
Heat a cast iron or nonstick, oven safe pan over medium high heat. Pat the swordfish dry with paper towels, rub them with the olive oil, then season generously with kosher salt and freshly ground black pepper. Place the fish in the pan and sear for 3-4 minutes on each side. Try not to move them around so they brown nicely on both sides.
Dollop the infused butter over the swordfish (don’t worry about spreading it out, it will melt over the fish in the oven) and place the pan into the preheated oven.
Roast for 6-7 minutes, or until it reaches 145 degrees. Once done, squeeze the juice of 1 lemon over the fish and transfer it to a plate to rest for 10 minutes before serving. Serve with lemon wedges on the side!
What if I want to make this recipe on the grill?
You can absolutely make this exact recipe on the grill! Simply follow all steps above, but ditch the pan and the oven. Rather, preheat your grill to medium high heat and sear the fish for the same amount of time, about 3-4 minutes on each side. Carefully drop the infused butter on the fish and grill for 5-6 more minutes or until the temperature reaches 145 degrees Fahrenheit.
Cooking times may differ depending on what type of grill you are using, but the important thing is that your swordfish is at least 1-1.5 inches thick. If it is thinner, it will take less time to cook.
Once it’s cooked, transfer to a place and squeeze the lemon juice over it. Allow it to rest for 10 minutes and enjoy!
